This cornbread recipe is gluten-free, vegan, and just as delicious as your traditional favourite. It’s a perfect addition to any meal! The recipe works well with the following substitutions: almond or soy milk for cow’s milk, brown rice flour instead of white rice flour, and coconut oil instead of butter.

So all of you will love this recipe; it is delicious and super frugal! I’m talking about less than $5 for the items that were required to make it. And don’t worry–I didn’t spend a fortune either; most recipes cost next to nothing anyway, so we’re good there 😉

My favourite thing about them? They make great leftovers, too, which means an even better bargain, right?!

Well, as mentioned before, if spicy things aren’t your style, then go ahead and use fresh jalapenos instead or substitute Mexican corn (red & green bell peppers), whichever way works best with what ingredients are available at home 🙂

FAQs

What is the difference between corn casserole and cornbread? ›

Corn casserole is a dish that mixes cornbread with whole kernel corn, sour cream, butter, and cheese, along with some creamed corn to form a new dish that has cornbread as its base.

What is the difference between New York cornbread and southern cornbread? ›

While both styles generally use the same ingredients -- cornmeal, flour, eggs, and baking powder -- the variance lies in the flavor and texture. Northern-style cornbread tends to be sweeter, moister, and cake-like compared to its Southern counterpart.

Should you let cornbread batter rest before baking? ›

Let the batter sit before baking.

We found that if you leave the batter to sit at room temperature for 10 to 15 minutes before baking it, the cornmeal has some extra time to absorb flavor from the other ingredients and the leaveners (baking powder and baking soda) get a head start.

Can you add a can of corn to Jiffy mix? ›

Replace 1/3 cup milk with 1/2 cup buttermilk. You can also add one 8-ounce can of strained cream corn. This also makes it extra corny, too.
