Pork Chop and Potato Bake #Recipe (2024)

If you are like me, your days are pretty much filled with work, school, errands, and you name it! But, for the most of us, our day doesn’t end there. While we may be ready to crash, we still have a hungry family to feed. One of my go-to meals is this easy Pork Chop and Potato Bake! While it may seem complicated, it is actually super easy! I love meals that I can prepare and pop into the oven. While it bakes, I can prepare an easy side dish, do other chores or better yet, sit back and prop my feet up!

As far as amount, I usually go ahead and do at least 6 pork chops and use two baking dishes. By doing this, I have enough left-overs for the next day’s lunch! It’s as yummy warmed up as it is hot out of the oven. You have to love it when you can get two meals out of one!

Pork Chop and Potato Bake Recipe

Ingredients:

5-6 Center Cut Pork Chops (can use bone-in or boneless)
6-8 Medium Potatoes, sliced into disk
1 medium onion, sliced and separated into half rings
1 Envelope Dry Onion Soup Mix
Onion powder
Garlic powder
Salt & Pepper

Directions:

1. Preheat oven to 350 degrees. Spray a 9 x 13 (or can use 2 baking pans if a larger amount of potatoes and pork chops is needed) baking dish with cooking spray.

2. Mix 2 parts onion powder to 1 part garlic powder. Rinse the pork chops. Then sprinkle salt, pepper, the onion and garlic powder mixture on both sides. Roll in flour.

3. Sear pork chops in medium-hot skillet until golden brown on both sides – two to three minutes on each side. I cooked 3 at a time so as not to overlap in the skillet. Drain on paper towel lined plate.

3. While the chops are searing, place potatoes (sliced into disk) on the bottom of the baking dish, along with sliced onion rings.

4. Sprinkle again with salt, pepper, and onion-garlic powder mixuture.

5. After pork chops are seared, place pork chops on top of potatoes.

6. Mix the onion soup mix packet with 1 cup of water. Pour on top of the pork chops and potatoes. Pour an additional 1/2 cup of water over the pork chops. (If using 2 pans, the one cup of onion soup mix is sufficient – just divide in half and add an extra 1/2 cup water to each pan).

7. Cover with foil and bake for approximately 1 to 1 1/2 hours. For a large dish with 5-6 pork chops or 2 pans, cook 1 1/2 hours.

**NOTE: Don’t rush the baking time! The longer they cook, the more tender they will be.
