While this recipe is definitely not a dump and go recipe, the prep work for Crock Pot King Ranch Chicken Casserole for Two is definitely worth it! It is incredibly delicious and so filling. Personally, I love not only the flavor, but that it is a one pot meal. With the generous servings, it is sure to fill you up without the need of a side dish.
If you are new to cooking, don’t let the long list of ingredients scare you away from this recipe. It is actually pretty simple to throw together. Most of your ingredients are mixed together. Then you just do your layers. If you take your time reading the recipe and following the instructions, the slow cooker will do the work of blending the flavors together for you. What You Will Need for Crock Pot King Ranch Chicken Casserole for Two
Ingredients Needed
- 1 2/3 cups shredded cooked chicken
- 1/4 red bell pepper, chopped
- 1/4 yellow bell pepper, chopped
- 1/2 clove garlic, minced
- 1/4 green bell pepper, chopped
- 1/4 small onion, chopped
- 1/3 cup cream of chicken soup
- 1/3 cup cream of mushroom soup
- 1/8 teaspoon ground cumin
- 1/3 cup diced tomatoes with green chilies with juices
- 1/4 teaspoon chili powder
- 1 1/2 teaspoons sour cream
- Salt and pepper to taste
- 3/4 cup shredded cheddar cheese, divided
- 4 corn tortillas, divded
Equipment Needed
- Small pot and strainer (You will only need this if you don’t use rotisserie chicken.)
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoons
- Medium bowl
- Stirring spatula
- 4 quart slow cooker
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 1 hour and 40 minutes to 2 hours on low or 50 minutes to 1 hour on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

Ingredients
- 1 2/3 cups shredded cooked chicken
- 1/4 red pepper chopped
- 1/4 green pepper chopped
- 1/4 yellow pepper chopped
- 1/4 small yellow onion chopped
- 1/2 clove garlic minced
- 1/3 cup cream of chicken soup
- 1/3 cup cream of mushroom soup
- 1/3 cup diced tomatoes with green chiles with juices
- 1/8 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1 1/2 teaspoon sour cream
- Salt and Pepper to taste
- 3/4 cup Shredded Cheddar Cheese divided
- 4 corn tortillas divided
Instructions
In a large bowl, mix together your peppers, onion, garlic, seasonings, sour cream, soups and tomatoes with chilies until well combined.
Place 2 corn tortilla shells in the bottom of a greased 4 quart slow cooker (overlapping as necessary).
Spread half of your mixture from step 1 over your your tortillas.
Top with half of your chicken.
Sprinkle 1/4 cup cheese evenly over top.
Repeat layers once more using remaining 1/2 cup cheese in the last layer.
Cover and cook 1 hour and 40 minutes to 2 hours on low or 50 minutes to 1 hour on high, turning your insert halfway through cooking if your slow cooker does not cook evenly.
