How to Make Pepper Jack Chicken in an Air Fryer

We love the flavors of fresh vegetables, chicken and pepper jack cheese. We have made a Crock Pot Pepper Jack Chicken for years. This air fryer dish is a little different but very similar. We absolutely love whipping this up in the air fryer for a quick lunch for 2 or 3 people.
Notes on Air Fryer Pepper Jack Chicken
- We made our dish in our Ninja Foodi, however you can make it in any air fryer.
- You can use any boneless skinless chicken cut into bite sized pieces. In the video we used chicken tenders. We have also used chicken thighs before.

Ingredients
- 1 lb boneless skinless chicken cut into bite sized pieces
- 4 slices pepper jack cheese
- 4 oz Fresh Mushrooms sliced
- 1/2 cup zucchini sliced
- 1/4 cup red bell pepper cut into bite sized pieces
- 1 tbsp garlic minced
- 1 teaspoon Italian Seasoning
- 2 tablespoons . olive oil
- salt to taste
Instructions
Place all meat and veggies in a bowl and toss in oil.
Stir well and season with garlic, salt and Italian seasonings.
Place into air fryer basket and air crisp/air fry at 360 for 15 minutes.
Stir well and top with cheese slices and cook for an additional 2-3 minutes.
